Intermediate Mead Making – Traditional and Yeast Selection

In this new intermediate class, we will talk about how to make a good traditional mead. It’s harder than many people think to create an environment that will keep yeast happy. We’ll start with honey and how the different flavors of varietal honeys can impact the flavor of the mead. Participants will be tasting honeys, varietal traditional meads, and a yeast experiment to see how the decision of ingredients can impact the finished mead. We’ll also cover yeast nutrients to keep the little “yeasty beasties” happy!

In this new intermediate class, we will taste several different varietal honeys and discuss how honey selection impacts mead.  We will also sample mead made from a few of those varietal honeys.  Participants will learn about various yeasts and the characteristics of each.  We will then sample meads made from a few different yeasts and discuss the differences. We will also talk about the importance of yeast nutrients to keep your fermentation going well.

Class takes place on April 27, 2019 from 10 am - 1 pm at the meadery in Pittsboro. All class participants MUST be over 21! No exceptions. Must sign up by Mar 27, 2019.

IMPORTANT: This is an intermediate class and attendees must have a basic understanding of home mead making processes, equipment, and terms and have made a few home mead batches. Although we love Joe’s Ancient Orange, it does NOT qualify as mead making experience!
